Mango lime chili shrimp over rice for the parents!


2 cups water

2 mangos

4 tablespoons butter

4 table spoons lime juice

1table spoon chili paste

Salt and cayenne pepper just a pinch of each

Carrots (we used 2 purple and 2 yellow)

1 1/4 cup mixed rice (red, brown and black)

Coconut spray

Honey (for drizzling)

Preheat oven to 450 degrees F while your prepping so it will reach the correct temperature when it comes time to making your carrots!

First start with the rice it takes the longest:

Mix the rice and 2 cups of water with a table spoon of butter

Bring to a boil

Reduce heat to low simmer w a lid for 25 min

Turn off heat take cover off mix it up and let sit for 5 minutes

Mango lime chili sauce:

Add 3 tablespoons of butter to the pan (medium heat)

Once melted add all of the diced mango

4 table spoons lime juice (if you have a fresh lime use the entire lime cut it up, squeeze the juice in and throw the lime in to the sauce, you can remove the skin before throwing in the shrimp)

1 table spoon chili past (don’t got past that your mouth will be on fire)

Salt and cayenne

Let this simmer with a lid until the mangos get really mushy (10-15 min)

While the mangos are cooking now is a good time to make your carrots

On a baking sheet placed the thinly sliced carrots.

Spray with coconut oil

Drizzle honey (as much or as little as you like)

And a pinch of salt

Place in the oven at 450 degrees F

Depending on how thin you cut the carrots will determine the time it needs to bake in the oven. These took 15-20min

While everything is cooking start cutting your shrimp into 3

We used Argentinian red shrimp (large) the have a lobster like flavor and texture. The cone red so they may look cooked but they are not!

Mix the uncooked shrimp in with your sauce (if you used fresh lime don’t forget to remove the limes from the sauce before throwing in the shrimp)

Let cook on low with a cover until shrimp is done.

Remove carrots from the oven

Put the rice at the bottom of a bow and pour the shrimp and sauce over it

And there you have it an easy really spicy dish that I wouldn’t recommend for your kids!
